Romeo Lane Dubai has announced the appointment of Chef Aakash Tyagi as its new Executive Chef, marking a significant step in the brand’s commitment to redefining contemporary dining through innovation, creativity, and exceptional culinary craftsmanship.

With over a decade of experience in Modern Indian cuisine, Chef Aakash Tyagi has built a reputation for creating distinctive dining concepts, engineering profitable menus, and leading successful restaurant pre-openings across India and the UAE. His expertise spans menu development, concept creation, operational leadership, team building, and culinary innovation, making him one of the emerging names in the region’s premium hospitality industry.

Before joining Romeo Lane Dubai, Chef Aakash served as Executive Chef at Pincode by Chef Kunal Kapur across India and the UAE, where he played a pivotal role in launching the brand’s outlets and overseeing culinary operations for five locations. He developed the brand’s signature menu by presenting regional Indian cuisine through a contemporary lens while maintaining authenticity. Under his culinary leadership, the restaurant earned international recognition, including being acknowledged by the Michelin Guide in 2025.

Earlier, Chef Aakash led the pre-opening of Suzy Q, Bengaluru, a 250-cover restaurant and bar, where he designed a highly successful menu inspired by Karnataka’s coastal cuisine and seasonal produce. His collaboration with local seafood suppliers from Mangalore and his focus on regional ingredients helped establish the restaurant as one of the city’s popular culinary destinations.

His professional journey also includes serving as Sous Chef at Raahi, Bengaluru, where he helped shape one of the city’s first restaurants dedicated to showcasing regional Indian cuisine with modern techniques. His work incorporated fermentation, kombucha, and indigenous culinary traditions, offering guests an innovative interpretation of India’s diverse food heritage.

Chef Aakash further refined his culinary expertise with prestigious hospitality brands including Namak at Dusit Thani Abu DhabiMasala Library by Jiggs Kalra, and Taj Lands End, Mumbai, experiences that laid the foundation for his contemporary cooking style rooted in classical techniques.

In his new role at Romeo Lane Dubai, Chef Aakash will lead all culinary operations, kitchen management, menu innovation, and team development. He has conceptualized an exclusive Modern Indian and Japanese menu, introducing a first-of-its-kind fusion of Robata grilling and traditional Tandoor techniques, complemented by seasonal ingredients and progressive presentation. He will also oversee food costing, vendor partnerships, quality assurance, and culinary training to ensure exceptional guest experiences.
