Mumbai, June 2026 – Fairmont Mumbai has announced the elevation of Saif Shaikh to Assistant Director of Food & Beverage for Fairmont Mumbai and Roswyn, A Morgans Originals Hotel. Having been an integral part of the hotel’s leadership team, Saif has played a key role in shaping the food and beverage experience across the property’s restaurants, bars, banquets, and guest-facing dining concepts.
His elevation reflects the hotel’s confidence in his operational expertise, commercial acumen, and ability to deliver exceptional guest experiences while driving innovation across diverse dining formats.
With over 11 years of experience in luxury hospitality, Saif brings extensive expertise gained through leadership roles with renowned hospitality brands including Fairmont, Enissmore, Hilton Garden Inn, JW Marriott, Grand Hyatt, and Sofitel. Throughout his career, he has demonstrated a strong ability to lead multi-outlet operations, drive revenue growth, optimise profitability, and build high-performing teams.
Prior to joining Fairmont Mumbai, Saif served as Director of Restaurants & Bars at JW Marriott Pune, where he oversaw multiple dining destinations and successfully launched Tao-Fu, Pune’s first authentic Sichuan restaurant. His career journey has also included progressive leadership roles at Grand Hyatt Mumbai, where he managed award-winning outlets including China House and Celini, further strengthening his expertise in luxury dining operations and guest engagement.
