Bringing with him over two decades of global culinary experience, Chef Novello will lead the hotel’s Italian culinary direction, further strengthening its reputation for refined and authentic dining experiences.

Most recently serving as Executive Sous Chef at Hotel Grimsborgir in Iceland, Chef Novello has built an impressive international career across renowned hospitality brands including Kempinski Hotels, The Ritz-Carlton Doha, and Studio City Macau. A specialist in Italian cuisine, he has helmed award-winning restaurants across Europe, Asia, and the Middle East, combining strong operational leadership with a deep-rooted understanding of regional Italian traditions.

A graduate of I.A.L. Hotelier Institute in Trieste, Italy, Chef Novello has consistently demonstrated culinary excellence across diverse markets, from fine dining Italian restaurants in Bangkok and Beijing to luxury hospitality destinations in Dubai, Nairobi, and the Dead Sea. His experience also includes collaborations with Michelin-starred chefs and leading high-performing kitchen teams across multiple openings and concept-driven dining spaces.

At JW Marriott New Delhi Aerocity, Chef Novello will focus on curating a thoughtful and contemporary Italian menu, rooted in authenticity yet reflective of evolving global palates. His approach emphasizes seasonal ingredients, precision, and a balance between tradition and innovation.
