Kolkata, August 2026: In the world of hospitality, few careers are defined solely by designations. They are shaped by journeys—the places travelled, people mentored, kitchens led and stories served on every plate. For Chef Ganesh Singh, Executive Chef at Fairfield by Marriott Kolkata & Ozone Convention Centre, the journey has been one of resilience, ambition and an unwavering commitment to excellence.

Born in the Himalayan state of Uttarakhand and raised in Shillong, Chef Ganesh’s formative years at Assam Rifles Public School, a military boarding institution, instilled in him the values of discipline, leadership and character. These early lessons became the foundation of a culinary career spanning more than a decade across some of South Asia’s distinguished hospitality brands.

After completing his hospitality education in Kolkata, Chef Ganesh began his professional culinary journey with Hyatt Pune, where he gained exposure to diverse kitchen operations and built the technical foundation for his career.

His next significant chapter began at Kochi Marriott Hotel, where he joined the pre- opening team in 2014. Over the following years, his culinary expertise and leadership capabilities saw him progress through multiple roles and responsibilities. In 2019, Marriott International entrusted him with a move to JW Marriott Kolkata as Sous Chef. Working in one of India’s most dynamic culinary markets, he expanded his leadership capabilities and was subsequently promoted to Chef de Cuisine.

His return to Kochi Marriott as Executive Sous Chef further strengthened his belief that successful kitchens are built not merely around recipes, but around people, collaboration and a shared pursuit of excellence.

That philosophy was further shaped during one of the most distinctive assignments of his career at Le Méridien Thimphu, Bhutan.

During his tenure in Bhutan, Chef Ganesh led culinary operations in a unique international environment, creating experiences for heads of state, ambassadors, military leaders and distinguished guests from across the world. Among the defining highlights of his career were serving His Majesty the King of Bhutan on multiple occasions and hosting the Prime Minister of India, along with senior government delegations.

Returning to Kolkata with a New Culinary Vision

Today, Chef Ganesh returns to Kolkata with renewed purpose, taking charge as Executive Chef at Fairfield by Marriott Kolkata & Ozone Convention Centre. For him, the city represents both professional roots and a deep personal connection with Indian culinary diversity.
