As I stepped in at Cafe restaurant of Hyatt Regency Delhi, I could feel the buzz of the vibrant exclusive Peruvian feast laid out beautifully. Peruvian Food Festival, a limited-period culinary showcase by acclaimed Peruvian Chef, Julio Castillo.
At Café, the restaurant’s dinner buffet features a dedicated Peruvian culinary section, showcasing a daily rotating selection of authentic specialties inspired by Peru’s rich gastronomic heritage, alongside Café’s signature international buffet.

The menu of the Peruvian Food Festival, is curated by acclaimed Peruvian Chef Julio Castillo, who is showcasing the vibrant flavours, rich traditions, and contemporary interpretations of Peruvian cuisine.
Bringing together the bold flavours and rich traditions of Peru with contemporary culinary techniques, Chef Julio’s menu has been inspired by his international culinary journey and deep respect for Peruvian gastronomy.

Rooted in tradition yet elevated with Asian and global influences, each dish reflects the distinctive balance of acidity, sweetness, umami and freshness that defines Peruvian cuisine, while thoughtfully adapting authentic recipes using locally sourced ingredients.
I started my meal with Veg Soup which had subtle flavours to my liking. Then next was a healthy salad which looked like a cake, delicious and gentle without any heavy seasoning. Talking of Peru and not having Ceviche is impossible. Chef Julio says it is the Signature dish and here he has presented it in the most authentic manner.
He highlights his signature Vegetarian dishes: Papa a la Huancaína, Causa Limeña with vegetables, Locro de Zapallo. Amongst
Non-Vegetarian, Ají de Gallina,
Seco de Cordero and Arroz con Pollo are the signature ones.
From refreshing Pisco Sours and celebrated Ceviche to authentic Peruvian specialities and desserts, I had the experience of the true essence of Peruvian gastronomy.

What do you like about India ?
I love the gastronomy of India. It has such a variety of cuisines.
Which is your favourite Indian dish?
Biryani
What is your philosophy of cooking?
My philosophy is to respect the authenticity of Peruvian cuisine while embracing cultural exchange. I believe food is a bridge between people, and every dish should tell a story through quality ingredients, technique, and passion.
For India Food Fest, do you change your recipes according to the local taste of diners?
I always try to maintain the essence and identity of Peruvian cuisine. However, I make small adjustments when necessary, especially regarding spice levels or ingredient availability, while ensuring the original flavors remain recognizable and authentic.
What do you like to eat as your comfort food at the end of the day when you are exhausted?
After a long day, I enjoy a simple homemade meal. A warm soup, rice with chicken, or a traditional Peruvian comfort dish reminds me of home and helps me recharge.
What are your dreams?
My dream is to continue sharing Peruvian cuisine around the world, building cultural connections through food, and inspiring future generations of chefs. I also hope to develop my own culinary projects internationally while proudly representing Peru wherever I go.
