GOA, INDIA – The St. Regis Goa Resort is proud to announce the appointment of Rohit Chadha as its new Executive Chef. A seasoned culinary professional with over 15 years of experience, Chef Rohit joins the resort to steer its culinary narrative, bringing a refined blend of innovation, global expertise, and a proven track record of excellence within the luxury hospitality sector.
Chef Rohit’s journey is defined by his tenure with some of the world’s most prestigious hospitality brands, including JW Marriott, Hyatt, and Taj. Most recently, he served as the Executive Chef at the JW Marriott Walnut Grove Resort and Spa in Mussoorie. Under his leadership, the property achieved the highest food quality scores in APEC (87.7%) for 2024, all while he meticulously managed a 70-member team and five diverse F&B outlets.
His international pedigree includes a specialised stint as an Executive Chef – Chef Trainer for the pre-opening team at the JW Marriott Kaafu Atoll in the Maldives. Chef Rohit is celebrated for his ability to balance contemporary flair with authentic tradition. His diverse portfolio includes:
• Modern Asian Expertise: Launching Lotus Deck, a modern Asian pop-up, and leading the award-winning Dashanzi, where he curated progressive Sichuan, Cantonese, and Japanese cuisine.
• Award-Winning Concepts: At Hyatt Regency Pune, he launched Zeta, a global bistro that earned the title of “Best In-House Restaurant of the Year” at the Indian Restaurant Congress in 2019.
• Fine Dining & Heritage: His foundational years were spent at the iconic Golden Dragon at the Taj Mahal Palace, Mumbai. He also served as Senior Sous Chef for the pre-opening of Hemant Oberoi, delivering avant-garde European cuisine with Japanese and Peruvian influences.
Beyond the kitchen, Chef Rohit’s culinary philosophy is shaped by global exploration. Recognised as one of the Top 10 Chefs by Condé Nast Traveller for the “Himalayan Raw and Fine” journey to Japan in 2019, he has also assisted 3-Michelin Star Chef Alain Passard. His passion for authentic flavours has led him across Thailand, Indonesia, Sri Lanka, and Singapore to study local fare.
